It's been a while since I've written. One month to be exact. I'm sorry it's taken so long. It feels like stretching my legs after a long period of sitting.
Today was my 3rd day at my new job. Kinda seems like a shit show the way they run the kitchen there. I'm hoping I won't be there for long.
Tonight is the Hunter's Moon in Taurus. I can see it now through the clouds, like a smoke screen... don't you love the fall?

Pumpkin Soup Recipe
1 Pumpkin
4 Garlic cloves
1 med. sweet potato
1 lg carrot
1/4 cup chopped ginger
1 med. apple
1 tsp cinnamon
1 tsp nutmeg
1 can coconut milk
2.5 cups veggie stock
Roast pumpkin, sweet potato, and garlic with oil, salt, and pepper to taste. Around 375°F for 40(ish) minutes.
Scoop out the pumpkin flesh when it's done.
Heat up a large pot with oil and some sprigs of thyme. Remove the stems when you can smell it.
Add ginger, diced onion, and apple. Sauté until soft.
Add the roasted veggies, coconut milk, veggie stock, cinnamon, and nutmeg. Blend together with an immersion blender. Add more stock (or water) if needed. Salt and pepper to taste.
(Optional: top with roasted pumpkin seeds.)
